Asian Salmon

Featuring Persian Lime Olive Oil
Serves 4 (320 cal. per serving)
Ingredients:
1 Tbsp Persian Lime Olive Oil
Zest of 1 lime
2 Tbsp coriander
1 tsp minced fresh ginger
4 (4 oz each) pieces of salmon
2 Tbsp honey
2 Tbsp soy sauce
Kosher salt and Black Pepper
Directions:
Preheat oven to 400 degrees.   In a small bowl, combine oil, zest, coriander, and ginger.  Place salmon in an ovenproof baking dish season with salt and pepper and brush with oil mixture.    Bake salmon for 7 minutes then turn on the broiler and crisp for 3 more minutes.  Another way is to sear the salmon first on a sauté pan, and then brush the oil mixture and finish baking in the oven.  *Total cook time for fish is 10 minutes per 1-inch of thickness.
To serve:
     Mix honey, black pepper, and soy sauce and drizzle over fish.
     *Cook’s Note: Salmon - the omega-3 fats in this lean protein increase the production
     of a compound that repairs damaged cells and helps control inflammation.
